What better way to use up those pesky browning bananas than to make banana choc-chip muffins. These are super easy to whip up and are so handy to have in the pantry, they are the perfect afternoon pick me up.
Ingredients:
- 2 Eggs
- 1/4 cup Peanut Oil (or vegetable, soya or canola oil)
- 2 ripe Bananas
- 1 cup Milk
- 3/4 cup Brown Sugar
- 2 1/2 cups Flour
- 4tsp Baking Powder
- 1 cup Milk Chocolate (roughly chopped)
Method:
- Preheat oven to 180 degrees celsius. Grease a muffin tin (we used a 12 muffin tin)
- Mix the eggs, oil, mashed banana, milk and brown sugar together
- Add in the flour, baking powder and chocolate. Be careful not to over mix or these will become too dense
- Pour the mixture into the muffin tin and bake for 15 minutes, until golden brown
