Banana Choc-Chip Muffins

What better way to use up those pesky browning bananas than to make banana choc-chip muffins.  These are super easy to whip up and are so handy to have in the pantry, they are the perfect afternoon pick me up.



  • 2 Eggs
  • 1/4 cup Peanut Oil (or vegetable, soya or canola oil)
  • 2 ripe Bananas
  • 1 cup Milk
  • 3/4 cup Brown Sugar
  • 2 1/2 cups Flour
  • 4tsp Baking Powder
  • 1 cup Milk Chocolate (roughly chopped)


  1. Preheat oven to 180 degrees celsius. Grease a muffin tin (we used a 12 muffin tin)
  2. Mix the eggs, oil, mashed banana, milk and brown sugar together
  3. Add in the flour, baking powder and chocolate. Be careful not to over mix or these will become too dense
  4. Pour the mixture into the muffin tin and bake for 15 minutes, until golden brown
