Easter Egg Cookies

With Easter Sunday just a few days away we decided to make the most of the abundance of easter eggs in the supermarkets and make some cute little easter egg cookies for Leish to take into her office. Although these cookies are delicious enough with just chocolate chips, the Easter Eggs make them that little bit more special. We used little mini Easter Eggs from the supermarket which were in pastel colours. The smaller the eggs the easier it will be to form the cookies.



  • 2 cups Flour
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 3/4 cup (170g) Butter
  • 1/2 cup granulated Sugar
  • 3/4 cup Brown Sugar
  • 1 large Egg + 1 Egg Yolk
  • 2 tablespoons Greek Yoghurt
  • 2 teaspoons Vanilla Extract
  • 1 cup mini Easter Eggs (plus more to decorate if you wish)
  • 1/2 cup Chocolate Chips
  1. Preheat the oven to 165 degrees celsius and line a baking tray with baking paper
  2. In a large bowl, mix together slightly melted Butter and both Sugars until well combined. Whisk the Egg and Egg Yolk, Yoghurt and Vanilla Extract
  3. Fold in Easter Eggs and Chocolate Chips
  4. Drop rounded balls of dough onto baking tray and bake for around 10-12 minutes, until cookies are browning around the edge but still soft in the centre. The recipe makes around 2 dozen cookies
