Passionfruit & Lemon Cupcakes

I made these cupcakes to celebrate something quite exciting…Leish returned from her 9 week holiday in Asia! Two of Leish’s favourite flavours are lemon and passionfruit, so these cupcakes were the perfect way to welcome her home. After picking her up from the airport, we were in the car home and Leish asks…’is there any baking at home?’. She was super happy to devour these little babies (3 to be exact) and gave them a big thumbs up.

If you want to make a passionfruit icing, either use 1teaspoon freeze dried Passionfruit or 1 teaspoon passion fruit pulp with the icing mixture. I used 1 teaspoon of freeze dried Raspberry (as it was what I had in the pantry), making them pretty and pink.



  • 1 1/2 cups Flour
  • 1/4 teaspoon Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1/3 cup + 1 tablespoon Milk
  • 3 tablespoons Lemon Juice
  • 115g Butter (soft)
  • 1 cup Caster Sugar
  • 3 teaspoons Lemon Zest
  • 1/4 cup Passion Fruit Pulp
  • 2 Eggs
  1. Sift the Flour, Baking Powder, Baking Soda and Salt into a bowl and set aside
  2. Combine the Milk and Lemon Juice in a jug, stir and set aside
  3. Cream the Butter and Sugar for about 5 minutes, until it is light and fluffy
  4. Add the Lemon Zest and Passionfruit Pulp, mixing well. Add the Eggs one at a time. Don’t worry if the mixture curdles, this is normal
  5. Add half of the dry ingredients, then add half of the milk mixture and mix. Then add the remaining dry and wet ingredients
  6. Divide the mixture between 12 cupcake cases in a muffin tray (my mixture made 15)
  7. Baking in the oven for 20-25 minutes until golden
  8. Once cooled, ice with the icing

Vanilla Cream Cheese Icing:

  • 125g Butter (soft)
  • 150g Cream Cheese
  • 3 cups Icing Sugar
  • 1 teaspoon Vanilla Essence
  • Optional: 1 teaspoon Passion fruit pulp or freeze dried Passionfruit or freeze dried Raspberry
  1. Beat the Butter until smooth. Add the Cream Cheese and mix
  2. Slowly add the Icing Sugar until all is smooth, then add Vanilla and flavour
  3. Spread evenly on cooled cupcakes
