Fruit Wraps

These little fruit wraps are lovely to take to picnics in Summer, or for a light dessert. The other week I took these to a dinner party and we decided to have them before dinner and they went down a treat. Use whatever fruit is in season, I chose to use strawberries, kiwifruit and mango. These go nicely with a coconut and lime dipping sauce. I made about 20 of these, but its best just to use your judgment in deciding how much fruit you want to use depending on how much you are making. I also cut my rice paper in half as they were quite big.

  • 1 cup each Fruit (e.g. strawberries, kiwifruit, mango, bananas, pineapple etc.)
  • 10 Rice Paper Wraps (cut in half)
  1. Slice all fruit thinly
  2. Soak Rice Paper in a bowl of warm water until pliable and place on flat surface
  3. Place a little bit of each fruit on the rice paper, fold in the ends and then wrap

To make the dipping sauce

  • 1 cup Coconut Milk
  • 1 Lime rind and juice
  • 3 teaspoons Brown Sugar
  1. In a saucepan, over a low heat stir the Coconut Milk, Lime juice and rind and Brown Sugar, bringing to the boil stirring constantly
  2. Take of heat and chill in the fridge
