Perfect Meringues

IMG_7864  Although Meringues are pretty simple, it is hard to get a balance between crunchy on the outside and soft and gooey on the inside. This is the perfect recipe as it melts in your mouth.

Last night we had a big family dinner as Leish left for a 2 month adventure around South East Asia today. For dessert she told me she wanted something fancy and something with passionfruit, so I made a deconstructed ambrosia with passionfruit marshmallow, freeze dried raspberries and crushed meringue, which was a shame as the meringue turned our really pretty.


  • 2 Egg Whites
  • 1/2 cup Castor Sugar
  • 1 Vanilla Bean Scraped
  1. Beat Egg Whites until firm
  2. Add sugar until well mixed, it should be shiny and glossy. Add scraped Vanilla Bean
  3. Spoon or pipe onto a lined baking tray, it should make about 10. Place into an oven heated to 120 degrees celsius for 1 1/2 hours
  4. After 1 1/2 hours, turn the oven off and leave the meringues in the warm oven for another hour
