Banana and Peanut Butter Muffins

I had about an hour before I had to go to nannying and I felt like baking a nice sweet treat. Earlier (during a criminology lecture which was rather boring) my friends and I were discussing our love for banana and peanut butter. So I decided to try making a batch of banana, peanut butter and oat muffins. These are quick to make, relatively healthy and a great snack for the lunch box. Also, the recipe happens to be vegan! Of course, if you prefer you could use regular milk as opposed to soy milk.

  • 1 1/2 cups Wholemeal Flour
  • 1 cup Rolled Oats
  • 2 teaspoons Baking Powder
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Salt
  • 2 Bananas mashed
  • 1/2 cup Peanut Butter (we use Pics, it’s amazing)
  • 1/2 cup Brown Sugar
  • 1 teaspoon Vanilla Paste
  • 1 cup Soy milk (or regular milk)
  1. Preheat the oven to 170 degrees
  2. In a bowl, mix together the flour, oats, baking powder, cinnamon and salt
  3. In another bowl, mix the bananas, sugar and vanilla paste and then add to the dry ingredients, incorporating them
  4. Add milk to the mixture
  5. Place into muffin tins and cover with a little bit of raw or granulated sugar to add some crunch
  6. Bake for about 20 minutes or until cooked through
