Homemade Snickers Bars

Leish and I saw this recipe on Julia and Libby and had to give this healthy take on the classic chocolate bar a go. It turned out lovely and rich and sweet and was surprisingly easy to make. Our recipe is slightly different from the original, and make these vegan making the chocolate out of cacao powder and coconut oil (like we did here), we just used melted Whittakers Dark Chocolate (72%). Not quite as healthy but definitely delish!



For the base:

  • 1/2 cup coconut flour
  • 1/2 cup maple syrup
  • 1 cup sliced almonds

For the filling:

  • 1 cup dates (soaked in hot water and de-pitted)
  • 1/4 cup peanuts
  • 1 T vanilla essence
  • 2 T melted coconut oil
  • Pinch of salt

Top layer:

  • 150g melted dark chocolate
  1. In a blender, mix together the coconut flour, sliced almonds and maple syrup until smooth. Press into a baking tray lined with baking paper
  2. To make the filling, blend together the dates, peanuts, vanilla essence, coconut oil and salt. This should be chunky and add texture to your chocolate bar. Place on top of the bottom layer and leave in the freezer
  3. Cut up bars into desired size and cover with the melted dark chocolate (making sure to spill the chocolate over the sides of the bars)
  4. Freeze for an hour to make sure the chocolate sets
